
Recipe: Red White and Blueberry Raw “Cheesecake”
Try this berry-filled, vegan “cheesecake” for a special holiday treat, from our friends at The Chalkboard.

For the crust:
- 2 cups raw almonds, dry
- 5 to 7 dates, pitted
- 1 1/2 Tbsp coconut oil
- 1 tsp vanilla extract
- 1/2 tsp salt
For the filling:
- 3 cups cashews, soaked for 2 hours
- 1 cup young coconut meat
- 3/4 cup lemon juice
- 2/3 cup coconut oil
- 3/4 to 1 cup coconut sugar
- 1/4 cup maple syrup (optional)
- 2 tsp vanilla extract
- 1/2 to 1 tsp salt
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1/2 cup strawberries
