Recipe: Ribbon Butternut Squash Salad

- 1 (1.5 lb.) butternut squash, halved lengthwise and seeds removed
- 4 Tbsp. extra virgin olive oil, divided, plus more for coating baking sheet
- 1 small head radicchio, finely chopped
- 1 head kale, finely chopped
- 1 cup sliced button mushrooms
- 2 Tbsp. apple cider vinegar
- 1 tsp. Dijon mustard
- 1 tsp. honey
- 1 Tbsp. shallots, thinly sliced
- Sea salt and freshly ground pepper, to taste
