Broccoli Slaw Recipe

Get a quick-fix of broccoli with this ten minute recipe!

Ingredients

  • 2 (12-ounce) bags broccoli slaw
  • ½ red onion, chopped
  • ¼ cup light mayonnaise or greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon granulated sugar
  • Juice of 1 lime
  • Salt and pepper, to taste
  • 1 teaspoon chopped fresh parsley (optional)

Instructions

Pour broccoli slaw into a large bowl. Add chopped red onion.

In a 2-cup measuring cup, add mayonnaise or yogurt, vinegar, sugar, and lime juice. Whisk together with a fork and pour half of dressing over broccoli slaw.

Toss slaw together to make sure well-dressed. Add additional dressing as needed. Season with salt and pepper, to taste. Mix well.

Add chopped parsley as garnish (optional).

Serve with remaining dressing on the side.

    I write because I’m a fan of ecoNugenics and the well-researched products you provide. My concern is with the broccoli slaw recipe in your latest newsletter.

    Doubtless, it tastes great. There is, however no mention of the importance of making sure all ingredients are non-gmo and organic.

    An alternative sweetener worth considering is xylitol. It has a flavor eceptionally close to that of sugar, but is metabolized more slowly making it less useful to any cancer cells present.

    Shredding your own fresh organic broccoli, or even using easy to grow broccoli sprouts, would eliminate the risk that packaged broccoli has been blanched or irradiated, either of which are destructive to the indoles and may produce undesireable byproducts.

    If organic limes are used, finely diced peel could also be included in the slaw.
